While this recipe calls for whole grain penne, feel free to use any pasta shape you prefer or have on hand. Short pasta shapes like fusilli, rotini, or farfalle work well as they can hold the sauce and mix easily with the vegetables and seafood. For a lighter option, you could also use zucchini noodles or spaghetti squash.
Instructions:
1. Preheat oven to 425°F (220°C).
2. Toss butternut squash, red onion, and Brussels sprouts with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway through, until vegetables are tender and caramelized.
3. Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
4. In a large skillet, heat remaining 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
5. Add mixed seafood to the skillet and cook for 3-4 minutes until just cooked through. Remove seafood from skillet and set aside.

7. Stir in chopped sage and walnuts. Season with salt and pepper to taste.
