Vinegar: The Bright Finishing Touch

If oil is the foundation, vinegar is the spark. A splash of acidity can wake up a dish the way a squeeze of lemon does. Keep these moves in your back pocket:

  • Dressings: A classic starting ratio is about 3 parts oil to 1 part vinegar. Whisk, taste, and adjust.
  • Marinades: Vinegar can help season and gently tenderize, and it helps flavors cling to proteins and vegetables. Even 30 minutes can make a difference.
  • Deglazing: After searing, add a small splash of vinegar to lift the caramelized bits off the pan. Instant pan sauce.
  • Finishing: A few drops over roasted vegetables, soups, or grain bowls right before serving adds brightness without heaviness.

Store Them Right

  • Keep oils and vinegars in a cool, dark place, like a pantry or cabinet. Light, heat, and air degrade oil quality over time.
  • Do not store oil right next to the stove. Heat and steam shorten its life.
  • Seal bottles tightly after each use.
  • Trust your senses. If an oil smells waxy, crayon-like, or just off, it is time for a fresh bottle.
